Delicious Stuffed Cabbage Rolls with Mushroom and Rice Filling

A Flavorful Homemade Cabbage Recipe

Hello everyone, and welcome! Today, we’re making a delicious and fragrant stuffed cabbage dish that is sure to surprise and delight your family and friends. Tender cabbage leaves are filled with a savory mixture of mushrooms, rice, herbs, and seasonings, then slowly cooked until everything is perfectly tender.

Ingredients

For the Cabbage

  • 1 whole cabbage
  • 300 ml milk
  • 500 ml water

For the Mushroom Filling

  • 2 onions
  • 320 g mushrooms
  • Olive oil
  • 1 teaspoon salt
  • 2 teaspoons soy sauce
  • 3 tablespoons tomato paste
  • 1 cup rice
  • Fresh parsley
  • Dried garlic
  • Dried mint
  • Dried pepper
  • Herbes de Provence
  • Caraway seeds

For the Sauce

  • 2 tablespoons tomato paste
  • 3–4 tablespoons olive oil
  • 600 ml water

Prepare the Cabbage

Start by taking one whole cabbage and cutting out the top portion. Place the cabbage in a large pot and add 300 ml of milk and 500 ml of water.

Cover the pot with a lid and cook the cabbage for about 20 minutes, allowing the leaves to soften.

Once the cabbage is tender, carefully remove it from the pot and let it cool enough to handle.

Prepare the Mushroom and Rice Filling

While the cabbage is cooking, finely chop two onions. Heat some olive oil in a large pan and sauté the onions until softened.

Add the mushrooms and cook for about 10–12 minutes, stirring occasionally. Season with one teaspoon of salt and two teaspoons of soy sauce.

Add three tablespoons of tomato paste and one cup of rice. Mix everything thoroughly, then allow the rice mixture to cool.

Once cooled, add chopped parsley, dried garlic, dried mint, dried pepper, Herbes de Provence, and caraway seeds. Mix well so that all the flavors are evenly combined.

Prepare the Cabbage Leaves

When the cabbage has cooled, carefully separate the leaves. Take each cabbage leaf and cut away the thick, hard part of the stem.

Place a portion of the mushroom and rice filling onto each leaf. Fold the sides inward and roll the cabbage tightly to create neat stuffed cabbage rolls.

Continue until you have used all the filling and cabbage leaves. If you need more servings, simply prepare additional filling.

Prepare the Cooking Sauce

In a separate bowl, combine two tablespoons of tomato paste with three to four tablespoons of olive oil. Add 600 ml of water and mix well.

Pour the sauce over the stuffed cabbage rolls, making sure they are well covered.

Cook the Stuffed Cabbage

Cover the pot with a lid and cook over medium heat for approximately 45 minutes.

During cooking, the cabbage becomes tender while the rice and mushroom filling absorbs the rich tomato sauce and aromatic herbs.

Serve and Enjoy

After cooking, carefully transfer the stuffed cabbage rolls to a serving dish. They should be tender, juicy, aromatic, and full of flavor.
