Creamy Broccoli and Cauliflower Vegetable Casserole

Ingredients
For the Vegetables
- 1 broccoli
- 400 g cauliflower
- 1 onion
- 1 carrot
- 1 garlic clove
- 2 bell peppers in different colors
- 1 bunch of cherry tomatoes
- Olive oil
- Salt
- Water
For the Casserole Mixture
- 4 eggs
- 1 teaspoon salt
- 5 tablespoons sunflower oil
- 130 g flour (about 1 cup)
- 500 ml milk (about 2½ cups)
- Fresh parsley
- Fresh dill
- 150 g cheese
For the Creamy Sauce
- 2 tablespoons yogurt or sour cream
- 2 tablespoons mayonnaise
- 1 garlic clove
- Fresh dill
Prepare the Broccoli and Cauliflower
Start by cutting the broccoli into florets. Place the broccoli in hot water and add 1 tablespoon of salt and 2 tablespoons of milk. Bring to a boil and cook for about 2 minutes. Drain and set aside.
Next, place the cauliflower florets in hot water. Add 1 tablespoon of salt and 2 tablespoons of milk. Bring to a boil and cook for approximately 4 minutes. Drain and set aside.
Sauté the Vegetables
Finely chop one onion. Heat a little olive oil in a large pan and fry the onion over medium heat until softened.
Finely chop one carrot and add it to the pan. Cook for a few more minutes, then add one finely chopped garlic clove and stir well.
Add two bell peppers in different colors. Using colorful peppers not only adds flavor but also makes the finished casserole more attractive.
Finally, add the cherry tomatoes and cook the vegetables until they are slightly softened.
Once the vegetables are ready, set them aside.
Prepare the Casserole Mixture
In a large bowl, crack four eggs and add one teaspoon of salt. Add five tablespoons of sunflower oil and 130 g of flour.
Pour in 500 ml of milk gradually while mixing until the batter becomes smooth and well combined.
Add chopped fresh parsley and dill, then mix everything thoroughly.
Assemble the Casserole
Place the cooked broccoli, cauliflower, and sautéed vegetables into a baking dish. Spread the vegetables evenly.
Pour the prepared egg and milk mixture over the vegetables, making sure it is distributed evenly.
Sprinkle 150 g of grated cheese over the top.
Bake Until Golden and Delicious
Preheat the oven to 180°C (350°F).
Bake the casserole for approximately 40 minutes, or until the top is golden and the center is fully cooked.
Prepare the Creamy Garlic-Dill Sauce
While the casserole is baking, prepare a simple sauce by combining yogurt or sour cream with mayonnaise.
Add one finely chopped garlic clove and fresh dill. Mix well until smooth and creamy.
This quick sauce adds a fresh, tangy flavor that pairs wonderfully with the warm vegetable casserole.
